March’s New shipment of Supply

So guess what was waiting for me at the dinning room table when I got home this evening? My books from Amazon .com ! Most girls I know spent their “dough” on clothes or makeup, I kinda just invest mine into books so I am pretty excited about what I will be reading for the month of March:

Chinese EggPlant and Potato Stew

So after coming home after yet another hectic day of attempting at this thing call “life”, I decided to recreate one of my dad’s famous recipe tonight and drum roll pleaseeeeee:

Chinese Eggplant and Potato Stew !

Let me start the post with this warning first, my dearest reader : there is a lot of oil ( i.e. fat) in this dish..which is what makes it de.lic.iouse. !

1) You will need

1 medium-sized Chinese eggplant ( and if you can’t tell the difference between a Chinese eggplant and a non-chinese one, here is a tip, the Chinese Eggplant is the one that resembles a purple cucumber )

2-3 small to medium size potatoes

1-2 scallions

and 1/4 of an Onion

2) Chop, dice and cube the above ingredients into any sizes as you please.

3) Generously add a few spoonful of oil into a wok at high heat and add the chopped scallion , once you get the scallion’s favour out, introduce the cubed potatoes to the wok.

4) Once the potatoes are almost fully cooked , leave them on the side and start cooking the diced eggplant. Basically let them swim in oil over medium heat (A little secret tip from my dad: add a bit of  flour or corn starch to the eggplant to enhance it’s creamy texture.

5) Finally introduce the eggplant to the potatoes that have already been cooked and combine the flavours together ! Bon Appetite!

p.s. For some reason, I was not able to make this dish taste the same way like my dad’s. But it was still pretty good 🙂  I guess there are somethings you just can’t imitate from the masters!

Banana Bread !

So after spending the day going to the Turkish Embassy (with fruitless effort) and lazing around the downtown SecondCup with my new book of the week: The Kite Runner. I decided to come home and make some Banana Bread. Here it goes:

1)  Ingredients :

3 or 4 Large bananas, mashed

1/2 cup white sugar

1 slightly beaten egg

1/3 cup melted margarine or butter

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups flour

1) Mix all the dry ingredients in the same bowl ( with the exception of sugar)

Combine and mix :

baking soda+baking powder+salt+flour

2) Cut the Bananas to equal-length sizes and mash them real good.

3) Add an egg to the bowl of mash bananas and beat them slightly.

4) Add the white sugar and melted margarine to the mashed Bananas

5) Combine both dry and wet ingredients together.

6) Bake the mixture in the oven for 20 minutes @ 350 Degrees F 

p.s. Here is my secret recipe : I add just a handful of shredded coconut and Raisin to add a extra texture to the banana bread.

Spring Break …is HERE !

My Spring Break has just began and here is my List of things to do during it :

  1. Sleep in …Zzzzz
  2. Go to the Turkish Embassy to get my Visa ( Vital component for my 2011-summer trip to Istanbul)
  3. Finish my assignment for Recreational Reading ( yes, I know! Who knew those two delightful words can ever be combined in the same sentence let along have an entire semester dedicated to it )
  4. Bake some Banana Bread and Cupcakes in anticipating of…
  5. Baby-sitting a super adorable and slightly princessy 5-year old
  6. Teach my roommates how to make Sushi : >
  7. Try to find the Deluxe Twilight Zone DVD collection at HMV
  8. Find a way to fix the DDR Mat..some how 😦
  9. Get to know my Mac a little better. I can’t help but miss my PC once a while.
  10. Chill with the homies, yo!
